Grapes are separated by variety by vineyard blocks. Sometimes a given vineyard block may ripen unevenly. It may be necessary to pick a small portion of the vineyard block, a portion too small to be effectively controlled in their fermenters. In this situation grapes with similar characteristics are combined.
